Yunnan Province Yiliang County Roast Duck is one of the specialty foods in Yiliang County, Yunnan Province. It iis a local dish unique in flavor,It become famous in central Yunnan about seventy years ago. It uses high-quality local ducks and special cooking techniques to make the duck skin crispy, the meat tender, and the flavor rich, with an excellent taste. The production process of roast duck involves multiple steps such as marinating, hanging in the oven, and roasting. The most critical step is the roasting process, which requires mastery of the fire and timing to roast a delicious and fragrant roast duck.

The way of processing is unique. First get rid of the feather of the dark,dig a hole under their wing,remove the guts and feet, put in some ingredients and pump the duck up. Secondly, hung the duck in a furnace with a hook and and roast in with a mild fire, pine leaves are used as the fuel and the dark should be turned from side to side constantly and some honey, fat and duck oil are smeared on it. When it is done, It is tender in meat but crisp in skin, and it is very delicious, It often goes with some green onion, jam or pepper and salt.
